擺盤的美學:先內化品味,再靈活思考

美學存在於任何領域,時裝、居家裝潢、園藝……,還有各種摸得到看得到的產品。料理的世界也不例外。從食材變成佳餚的路上,就是一連串美學構成的過程。過去,我們多把討論的重心放在食物本身,這次,就從餐盤器皿聊起。


「消費者和主廚的喜好很不一樣。」餐具品牌 WAGA Store 副總張恒嘉 (Gia Gia) 說。平平都是用來盛裝料理的載具,在一般人和廚師的眼裡就是不一樣。從大方向來說,消費者偏好八吋以內的中小型餐盤,而且比較喜歡有花紋或 Zakka 風格的物件。前陣子古裝劇《延禧攻略》的討論熱度到達頂點,WAGA 也抓緊這個風潮,以戲中色調為靈感推出餐具。
